Blueberry Muffins

Preheat Oven to 400'

Ingredients
1 3/4 cups all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 beaten egg
3/4 cup milk
1/4 cup cooking oil
1 teaspoon finely shredded lemon peel
1 cup blueberries (fresh or frozen)

Directions
1. Grease 12 2 1/2 inch muffin cups and set aside
2. In a medium mixing bowl combine all the dry ingredients.
3. In a small mixing bowl combine egg, milk, and oil.
4. Add egg mixture all at once to the dry mixture and stir until moistened. (Batter will be lumpy)
5. Fold in blueberries.
6. Spoon batter into muffin cups filling about 2/3 full.
7. Bake at 375' for 15 minutes or until golden on the edges.
8. Cool for 5 minutes and remove from muffin cups.

French Toast

Ingredients
4 eggs
1 cup milk
1 tsp vanilla
¼ tsp cinnamon
½ tsp sugar
12 slices of bread
Powdered sugar

Directions
Preheat skillet or griddle on medium heat. In a shallow bowl, beat the eggs until even color. Add milk, vanilla, cinnamon, and sugar. Mix well. Dip one slice of bread in mixture being sure to coat evenly. Place coated bread on skillet or griddle until golden, flip the bread and let cook until it is golden also. Repeat until you have used all the mixture. Sprinkle with powdered sugar as soon as removed from skillet/griddle.

May be served with more powdered sugar or maple syrup.

Serves 4-6.
